Ingredients:

  • 1 medium head of cauliflower
  • 2 tablespoons oil (vegetable, sesame, or olive oil)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup mixed vegetables (such as carrots, peas, corn, and bell peppers), diced
  • 2 eggs, beaten (optional for added protein)
  • 2-3 tablespoons soy sauce (or tamari for gluten-free)
  • Salt and pepper to taste
  • Green onions, chopped, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Prepare the Cauliflower:
    • Remove the leaves and core from the cauliflower. Cut it into florets.
    • Pulse the cauliflower florets in a food processor until they resemble rice-like grains. You can also grate the cauliflower using a box grater.
  2. Cook the Eggs (optional):
    • If using eggs, heat a small amount of oil in a large skillet over medium heat. Pour the beaten eggs into the skillet and scramble until fully cooked. Remove from the skillet and set aside.
  3. Stir-Fry the Vegetables:
    • Heat the remaining oil in the same skillet over medium-high heat.
    • Add the minced garlic and chopped onion. Cook until fragrant and translucent, about 2-3 minutes.
    • Add the mixed vegetables and cook until they are tender, about 5-7 minutes.
  4. Add Cauliflower Rice:
    • Stir in the riced cauliflower and cook for an additional 5-7 minutes, or until the cauliflower is tender but not mushy.
  5. Season:
    • Pour soy sauce (or tamari) over the cauliflower mixture. Stir well to combine.
    • Season with salt and pepper to taste. Adjust seasoning as needed.
  6. Add Eggs (if using):
    • If you cooked eggs separately, return them to the skillet with the cauliflower mixture. Stir until evenly distributed.
  7. Garnish and Serve:
    • Garnish with chopped green onions and sesame seeds, if desired.
    • Serve hot as a main dish or side dish. Enjoy your cauliflower fried rice!
